Ingredients
8 oz gluten-free cream cheese (softened)
¼ cup honey or maple syrup
1 egg
1 tsp vanilla extract
1 tbsp lemon zest
½ cup mixed fresh berries (blueberries, raspberries)
2 tbsp melted butter
Directions
- Prepare the Crust
🔸 Mix gluten-free graham cracker crumbs with melted butter.
🔸 Press a heaping tablespoon into the bottom of silicone muffin cups to form a mini crust. - Make the Cheesecake Filling
🔸 Beat cream cheese, honey, egg, vanilla, and lemon zest until silky smooth. - Assemble
🔸 Spoon cheesecake filling over the crusts. - Air Fry
🔥 Preheat air fryer to 320°F.
🔥 Lightly spray the air fryer basket.
🔥 Place filled muffin cups in the basket and air fry for 5–7 minutes, until set and just lightly golden. - Cool & Serve
🍽 Let bites cool completely, then chill for 30 minutes for the best texture and flavor!
