Ingredients
1 cup grated carrots
1/2 cup crushed pineapple (drained)
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup all-purpose flour
1 egg
1/2 cup cream cheese (for filling)
1/2 cup panko breadcrumbs
1 tbsp coconut flakes (optional)
Directions
- Mix & Form
🔸 In a bowl, mix carrots, pineapple, brown sugar, cinnamon, nutmeg, flour & egg.
🔸 Roll into balls with a small cube of cream cheese in the center.
🔸 Chill for 15–20 mins to firm up. - Coat with Crunch
🔹 Roll each ball in panko & coconut mix.
🔹 Lightly spray with oil. - Air Fry to Crispy Cake
🔥 Preheat air fryer to 360°F.
🔥 Air fry 6 minutes, turning once. - Serve & Sprinkle
🍽 Dust with powdered sugar or drizzle with icing!
