Ingredients
2 medium zucchinis
1 cup cooked shredded chicken
¼ cup buffalo sauce
2 tbsp cream cheese, softened
1 green onion, sliced
Optional: ranch or blue cheese dressing for topping
Directions
- Prep the Boats
🔸 Cut zucchinis in half lengthwise and scoop out centers with a spoon (leave about ¼-inch thick walls).
🔸 Lightly spray with olive oil and set aside. - Mix the Filling
🔸 In a bowl, mix shredded chicken, buffalo sauce, cream cheese, and half of the mozzarella. - Stuff & Top
🔸 Fill zucchini boats with chicken mixture. Top each with remaining mozzarella. - Air Fry to Perfection
🔥 Preheat air fryer to 375°F.
🔥 Place zucchini boats in basket (work in batches if needed).
🔥 Air fry for 8–10 minutes until cheese is melted and bubbly. - Finish & Serve
🍽 Sprinkle sliced green onions on top. Serve hot with a drizzle of ranch or blue cheese if desired!
