Ingredients
1 cup canned black beans (rinsed & drained)
½ cup shredded cheddar cheese
¼ cup salsa
2 tbsp chopped cilantro
1 tsp cumin
½ tsp garlic powder
Optional: sour cream or guacamole for topping
Directions
- Prep the Peppers
🔸 Slice mini peppers in half lengthwise and remove seeds.
🔸 Lightly spray with olive oil and set aside. - Make the Filling
🔸 In a bowl, mash black beans slightly.
🔸 Stir in salsa, cumin, garlic powder, and half the cheddar cheese. - Stuff the Peppers
🔸 Fill each pepper half with bean mixture.
🔸 Top with remaining cheese. - Air Fry to Fiesta Time
🔥 Preheat air fryer to 370°F.
🔥 Arrange stuffed peppers in the basket (work in batches if needed).
🔥 Air fry for 6–8 minutes until cheese is melted and peppers are tender. - Garnish & Serve
🍽 Sprinkle chopped cilantro. Serve with sour cream or guacamole if desired!
