6 large hard-boiled eggs
2 tbsp mayonnaise
1 tsp Dijon mustard
1/4 tsp paprika
1/2 cup all-purpose flour
1 egg, beaten
1 cup panko breadcrumbs
1 tbsp olive oil spray
Directions
- Prep the Filling & Shape
🔸 Slice hard-boiled eggs and separate yolks.
🔸 Mash yolks with mayo, mustard, paprika, salt & pepper.
🔸 Spoon mixture into egg whites, then gently close halves together into “egg balls.”
🔸 Freeze for 20 minutes for easier handling. - Coat for Crispiness
🔹 Roll each filled egg in flour.
🔹 Dip into beaten egg.
🔹 Coat in panko crumbs. - Air Fry to Golden
🔥 Preheat air fryer to 375°F for 2 minutes.
🔥 Spray croquettes with olive oil.
🔥 Air fry for 6 minutes, turning halfway, until golden and crispy. - Serve & Dip
